Autumn has officially arrived here. It’s still a little humid, but there's a cool wind and leaf piles for jumping in and gathering. I came downstairs after a shower this morning to this lovely display left by the autumn fairies...no need for a leaf craft from mummy, they took care of it themselves.
With seasonal eating in mind, I picked up that squash at the market a few days ago for making soup. Its adapted from a book called "Soup & Beyond" from the Covent Garden Soup Company. I've only made it a few times, but it really is a keeper. Admittedly, the list of ingredients is a little daunting – but its definitely worth the effort. The book has some wonderfully unusual recipes including carrot and kiwi, broccoli with lime and horseradish… yum. Unfortunately the autumn fairies only seem to like tinned tomato soup with heaps of melted cheddar and garlic bread!
Add this one to your list Stefani!
Spicy Sweet Potato & Butternut Soup
1 tbsp oil
1 medium onion finely chopped
2 garlic cloves crushed
1 tsp of ground cumin
1 tsp of ground coriander
2 tbsp of sesame seeds
1 cm of fresh ginger finely grated
1 green chilli, chopped.
Zest & juice of 1 lime
1 tsp runny honey
1lb sweet potato (peeled and cut into 1 inch dice)* tip, I roast mine beforehand to make peeling & chopping easier
1lb butternut squash (peeled and cut into 1 inch dice)
2 pints of chicken or vegetable stock
14oz tin of chickpeas drained
• Saute onion and garlic in oil gently for 10 minutes
• Stir in the spices, sesame seeds, ginger, chilli, lime zest and honey
• Add the sweet potato, squash, juice of half a lime and the stock
• Cover, bring to the boil and simmer for about 10 minutes or until the veggies are almost tender
• Add the chickpeas and remaining lime juice to taste
• Cool, then puree with a hand blender
• Garnish with natural yoghurt and fresh coriander
Really bad photo, still getting to grips with the camera and typepad!
YAY!!!! This looks delicious! I'm so happy to have this recipe Lina. It's not something I would have tried, but with your recommendation, it's officially on the docket for a future dinner :-) Thanks so much!
