I bet if you asked my children what they like about summer, popsicles would feature pretty high on their list. I cannot bear those awful artificial lollipops which stain my children’s clothes and skin and made these as an alternative today. Bless her heart my daughter declared, "these are the best popsicles in the world!".
Strawberry & Pink Milk Popsicles.
21/2 cups of strawberries washed and hulled.
2 cups of water
1 tablespoon sugar
1/2 cup milk
Put the strawberries, water and sugar into a pan and bring to the boil. Simmer for 10 minutes.
Strain the strawberries in a sieve and push the pulp through a sieve.
Save the remaining pulp for a smoothie later.
Wait for the juice to cool down.
Mix ½ cup of milk with ¼ cup of strawberry juice – yummy pink milk.
Add milk and juice mix to popsicle mold and freeze for an hour.
Add strawberry juice to the mold and freeze for at least another 2 hours.
Works well with any berries and smoothies too.
Edited to add: Um bad spelling - that should be mould not mold. Unless you want a moldy popsicle that is.

They look delicious. Made something similar with yoghurt and smoothie last year - it's such a winner! Periwinkle, type 'ice lolly moulds' in and Amazon etc etc have bargains for making icy magic. This one is very cool - Lakeland plastic ice lolly mould: http://www.lakeland.co.uk/product.aspx/!12196

I think I will definately try that recipe thanks for posting it. We have those sippy lolly moulds, they are good although a little bit big for my 2 year old.

Home made pink mil - fab plan! I've done frozen apple juice and frozen yogurt before and they're always a hit but there is something wonderfully Charlie and Lola about yours!

How sweet! Thanks for sharing the recipe. I made smoothies a few times and froze them, but the molds I have were awful and dripped all over the place, even with a drip cup base, so I was most discouraged. (What brand are yours, if you know?)

You can try filling the top of the rocket with frozen blueberries for red, white & blue! They look beautiful in there, and the kids love assembling (and eating) them. I make mine with coconut milk and strawberry or watermelon juice.
