Baking today with Tommy.
My cookies generally taste fine, but aesthetically they've always looked like little rock cakes rather than flat which irks me somewhat. I've wondered whether its baking powder vs baking soda (no self raising flour here) or not enough fat perhaps? I've never got to the bottom of this yet. Any ideas?
Problem solved with these maple snickerdoodles. Pure sugar and fat. Tasty and beautiful.
ask Deb at Smitten Kitchen - she's very responsive to questions. These look delicious!

Hello Lina
I usually take the tray out about 3 minutes before the end of cooking time, hold on tight (including holding the baking parchment/tray liner) and bang it down flat on the worktop, hard. It deflates the cookies, then return to the oven for the rest of the cooking time. I find it makes them chewier too, as well as looking less like sponge drops.
(the recipe I use is plain flour)
Hope that helps.

Yuuuuuum. I am possibly overlooking it, but is there a recipe? I love maple, in any form.

They look good! Can't give you any advice as I have the opposite problem, mine always look as flat as pancakes, probably from the constant opening of the oven to check whether they are ready when I am asked to show that they are not in fact ready yet!!
